Who Should Attend
This basic introductory course is intended for personnel in
the food and beverage processing and packaging
industries. Course material should be applicable to those
working in both small and large companies across a wide
product mix. Administrators, supervisors, non-technical or
technical personnel involved in production, procurement,
quality assurance and marketing of foods will gain useful
and relevant information.
Description
This is an introductory course in manufacturing food
products in compliance with established industry practices
and United States law (GMP). Participants will be exposed
both to the requirements for manufacturing food products
in the U.S., and to the sources of adulteration and
misbranding of foods that should be avoided in their own
operations.
The concept and application of HACCP as an industry
practice and a regulatory tool will be discussed, as will the
novel requirements of the Bioterrorism law as it relates to
non-U.S. food manufacture.
Writing a standard operating procedure, investigating a
defective product, and an exercise in handling complaints
and threats will also be will also be presented. The course
is structured to provide ample opportunity to discuss ideas
and concepts among the participants and with the Course
Director.
